Marinated Tuna with Rice

Marinated-Tuna

 

“Marinate”

Marinating meat or fish is one of the cooking preparations quite often used in Japanese cooking. Soy sauce, Miso paste or fermented rice paste are common ingredients to marinate with meat or fish.

The reason is not only to add flavour to the meat or fish but also to remove excess water from them. That makes the meat or fish develop a rich flavour.

 

Ingredients (for two)

  • Tuna …………….…… 250g – 300g
  • Rice ……………….…. 1 – 1.5 cup

Garnishing & Condiments

  • Nori …………….……. 1 sheet
  • Wasabi ……………… a little
  • Spring Onion …….. a little
  • Sesame Seed ……… a little

Marinade Sauce

  • Soy source ………… 3 tbsp
  • Mirin ……………….. 2 tbsp
  • Dry White Wine ….. 1 tbsp
  • Dashi Powder ……. 1 sachet

*Mirin: Rice wine with low alcohol content and high natural sweetness. If you don’t’ have it, it can be replaced with 2 tsp of sugar.

*Dashi: Fish/Seaweed Stock

 

Instructions

  1. Mix all the marinade sauce ingredients then heat it up in a pan until boiled. Set it aside then cool it down.
  2. Cook rice with a rice cooker.
  3. Slice a fillet of tuna.
  4. Once the marinade sauce has cooled down, put the sliced tuna in. Marinate for about 30 minutes in a fridge.
  5. Cut spring onions and Nori.
  6. Once the rice has cooked, put it into a bowl.
  7. Place the marinated tuna on top of the rice.
  8. Sprinkle the spring onion, nori and sesame speeds over the tuna. Add Wasabi on top of the tuna if you like.
