Stir Fried Lotus Root with Chilli

“Stir Fried Vegetables with Chilli”

The key ingredients for this dish are soy sauce, sugar, chillies and sesame seeds. You can use any vegetables you have in your fridge to make this stir fried dish. Burdock and lotus roots are common vegetables for this dish. They contain a lot of fibre and the texture is crunchy. I have recently seen lotus roots at asian vegetable shops, but it is not that common to buy in Australia yet. I sometimes use carrots and green capsicums or potatoes. Super easy to add to your plate as a side dish.

Ingredients 

  • Lotus Root …………….…… about 10 cm length
  • Soy Sauce …………….……. 1 tbsp
  • Dry White Wine ……………… 1tbsp
  • Sugar …….. 2 tsp
  • Sesame Seeds ……… 1tsp (Add more if you like)
  • Chilli ………… 1 (Adjust to how hot you like)
  • Dashi Powder …………. 1 sachet
  • Corn Starch ……………….. 2 tbsp
  • Water ….. 3 tbsp
  • Sesame Oil ………. 1/2 tbsp

 
Instructions

  1. Slice the lotus roots into about 1mm thin slices.
  2. Soak the sliced lotus roots in cold water with a bit of vinegar for 1 hour.
  3. Strain the lotus roots.
  4. Mix water and corn starch in a bowl.
  5. Heat sesame oil in a frying pan with a high heat then stir fry the lotus roots and chilli.
  6. Once the lotus roots have become translucent, add dry white wine then add sugar.
  7. Reduce to a low heat then add dashi powder and soy sauce.
  8. Add the mixture of water and corn starch then mix well.
  9. Add sesame seeds.
